Parmesan Chicken Bites

For all that know me know that I am super lucky to be married to an awesome husband who likes to cook! I don’t enjoy cooking, so I must admit I don’t cook but on rare occasion! There are a few meals that I cook and this is one of them.

One of the foods I missed since going Gluten Free is chicken tenders. There are not many options for gluten free chicken tenders at restaurants or the grocery store. Here is a delicious chicken bite recipe that you can make gluten free by substituting GF flour and GF bread crumbs.

What You Need:

1/2 cup vegetable oil
1 pound boneless, skinless chicken breasts
1 cup gluten free bread crumbs
1/4 cup grated Parmesan
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 cup gluten free all purpose flour
2 large eggs, beaten
2 tablespoons chopped fresh parsley leaves

What You Do:

Cut Chicken into 1-inch chunks, season with salt and pepper to taste

Heat the oil over medium heat

Combine bread crumbs, Parmesan, garlic powder, and smoked paprika in a bowl

Prepare eggs and flour into separate bowls

Dredge the chicken into flour, egg wash, and breading mixture, pressing in to ensuring coverage.
Working in batches cook thoroughly.
Sprinkle with Parmesan and parsley. I didn’t have parsley this time and it was yummy without it as well!
I served the chicken with Edemame and had blue cheese for dipping.
Serve and Enjoy.
